Wonton Soup

I recently made a homemade wonton soup. All photos are “clickable.” Ingredients include:

  • ginger (Fresh)
  • chicken breast
  • ground pork
  • hoisin sauce
  • shallot
  • portobello mushroom
  • salt, pepper
  • sesame oil
  • egg white
  • shaosing wine

Wonton Filling

Combine all the ingredients into a food processor. Chunk up the chicken into small pieces, and pre-grate your ginger. I eye-balled, guessed at all the measurements. Pulse until chunky and well-combined, but not smooth. The meat will be a light brown color due to the hoisin sauce.

Creating Wontons

Use wonton skins. Fill each wonton with the filling, and pinch-together to make the classic small wonton shape.

With good-quality stock, simmer chicken soup and add two cloves garlic, crushed. These will be removed. Once a light boil is achieved, add the fresh wontons. Add soy sauce to taste, and mushrooms, if desired.

Twist and Pinch

Finish the soup in 10 minutes time with fresh scallions.

First Wonton

For this dinner, I also prepared baby-back pork ribs using an augmented store-bought, local-made BBQ sauce. I added brown sugar and oil to the sauce. I marinated the ribs for 5 hours before roasting in a 350 degree oven. Garnish with more scallions.
